Galatians 5:4 ESV
You are severed from Christ, you who would be justified by the law; you have fallen away from grace.
You can't keep laws to please God
Jesus did enough, you don't have a list of rules to keep

Eggplant Pizza

Eggplant Pizza
First:
Slice eggplant in 1/2 inch rounds. (leave the skin on, fiber).

Cover a pizza pan or cookie sheet with paper towels and lay the rounds out. Ever so lightly salt them (with Himalayan pink salt, preferably). After a while the liquid inside will start to bead up on top. Blot with a paper towel and flip them over and do the same on the other side. You may or may not need more paper towels. Or you can just shake them off over the sink if you want. (TIPS: Taking the water out this way will keep them from being too mushy when you bake them. DON’T over salt them or your nine year old will be mad at you. Just a tiny bit will work.)

Assemble:
Use parchment paper to line a pizza pan--you can use coconut oil--but parchment is awesome for keeping things from sticking. Then put down a light layer of almond flour first and spread the eggplant rounds over it. They can be touching. In fact, I recommend you squeeze as many as possible on there. Even slice some in half and make a puzzle of it if you want.

Sprinkle another light layer of almond flour over the top. This will help sop up moisture and get toasty yummy.

Bake:
Bake in a 350 degree oven for 15-20 minutes. Keep an eye on them so the almond flour doesn’t burn. If you want them firm, bake for less time. If you want them mushy, bake longer.

Make Sauce:
One 15 oz can of organic crushed tomatoes. Stir in 2 tablespoons chia seeds, 1 tablespoon Italian seasoning, salt + pepper to taste—don’t make it too salty since all the other salt in the cheese and pepperoni will be there. Let it sit 5 to 10 minutes so the chia seeds soak up the juices. This will make the sauce nice and thick. Do this step while the eggplant bakes.

Assemble Toppings:
I use my Ninja to chop the cheese up to bits. I used 3 types: mozzarella, Queso Fresco, and longhorn cheddar. Use as much or as little as you like. I chopped spinach, sundried tomatoes, and pepperoni into it and mixed it all together with the cheese. (This makes topping the pizza much faster/easier.) Pepperoni tip: we slice ours up with scissors and then put it in a bowl with about a tablespoon of grass-fed gelatin and rub it around with our fingers—this soaks up the grease and helps the pieces not stick together.

Assemble Pizza:
Take the eggplant out of the oven. Top each slice with as much or as little sauce and toppings as you like. We prefer to spread the cheese mixture all over the pan like a real pizza—this leaves amazing browned bits of cheese to eat in between each piece.

Bake for 10 minutes or until the cheese is melted. Broil for a few minutes if you want the top bubbly and browned.

Eat immediately with a fork or wait for it to cool a little and you can maybe/possibly/depending-on-your-eggplant pick it up with your hands like real pizza. Just depends on how messy you want to be.

I've been learning all about essential oils...specifically their medicinal uses and how they're absorbed into the body...so basically I'm posting this here for myself, because it's got a lot of great info on how the skin works and absorbs the oils.

Current Health Obsessions

I haven't posted here for a bit. Because life. Amiright? :)

So I thought I'd do a small update and start keeping a list of THINGS I'm working on and incorporating into our life to keep my little family healthy.

Chia seeds. I put them in everything.

Still loving not washing my hair! It has taken a while to get the right ratio of baking soda and ACV, and my hair still tends to get oily quick, but I'm still quite pleased and don't see ever going back to shampoo and conditioner. We don't wash Ceil's hair (it's red and curly and thick) we just rinse hers and use an organic conditioner. I might try doing a baking soda wash on hers soon and see how it goes. She was a bit fussy the one time I used ACV on her hair (silly girl).

Green smoothies...my awesome hubby has one every day. Usually peanut butter.

Coconut oil. For cooking, eating (by itself!), using in recipes, as hand lotion, lip balm, in my essential oil concoctions, body lotion. I find it's only greasy for a little bit and then the greasiness dissipates.
Also great for removing eye makeup and makeup in general. I use it all over my face--and again the greasiness dissipates and my skin absorbs the oil (very happily). But don't get it in your eye. That's weird. :)

Essential oils! I'm currently in love with wintergreen--I'm using it in my homemade toothpaste, mouth wash, and a balm I made for pain relief--works wonders!

Our diet is still not 100% organic or grass fed, but we're headed there slowly. I'm always thrilled to find organic products at my Walmart--and I swipe them up quickly so they know they've got customers who want those types of items.

Making Over Everything: Apple Cider Vinegar

Disclaimer: I'm not a doctor nor a nutritionist, so take my advice at your own risk. But really, the internet is awesome, and usually less quacky than actual doctors I've been to. But whatever. I talk about what works for me--which may or may not be of use to you--but thanks for stopping by either way.


Apple. Cider. Vinegar.

4 reasons I've added ACV to my routine...

1. When I started getting sick a few of months ago, I started sipping ACV throughout the day. I ended up getting over my whatever-it-waas (symptoms of strep that was going around the office) pretty much within 24 hours.

Now...maybe I didn't actually have strep...maybe I had something else...maybe I had nothing at all...maybe it was prayer... Anyway, it worked out, and ACV will be my go-to the next time I feel sickness coming on, and I'll test it out again.

2. Since I started drinking ACV every day (1-2 tablespoons...added to water throughout the day...you won't even notice the flavor...) my nails have gotten REALLY strong. And they've grown. Which is a rarity for me (they never last very long!).

This could also be attributed to my use of vinegar hair rinses. I'll be continuing both methods indefinitely.

3. I've actually been less munchy. This, again, could be attributed to several factors (including my overall purposeful attempts to eat less and better), but it certainly can't hurt!

4. I somehow got into some poison ivy while working in the yard. I'm very allergic--but this time it was barely itchy and went away within just a few days. I used a cotton ball to put ACV directly on the rashes and also kept up my sipping--and it was gone before I knew it.

Coincidence? Hmmm.

I use Bragg organic, raw, unfiltered, with the "Mother" --the stuff in the regular grocery store has had all the good things removed from it so it looks prettier.
Hehe, my favorite is the "body sludge toxins" ---gross!

From experience, I warn you... you may notice your skin breaking out when/if you start taking ACV. I encourage you to keep taking it through this though, because if it's causing your skin to break out, it's most likely getting rid of toxins, and you want that to happen. It'll pass! (As long as you're eating healthy otherwise--but if you're eating fast food and sugar and junk every day, which is NOT acceptable, you're just going to keep breaking out. Just sayin'.)

Strawberry Cheesecake Smoothie #notarecipe

This is actually a little smoothie I made back in the spring...I haven't been eating fruit (i.e. sugar) recently, but I came across the pics, and they were so pretty, I thought I'd post them just for the fun of it. :)


The ingredients were just ice, water, strawberries, and cream cheese + stevia to sweeten. I don't know the ratios of what I used--needless to say it's not too complicated, just play around with it.
