Every time I see my bag of chia seeds or eat something with chia seeds, or even just think about chia seeds, I hear this dumb little jingle. Best. Marketing. Ever.
I started thinking about chia seeds when we watched the documentary, Hungry For Change. Great info. I love this line: "The problem is that we're not eating food anymore, we're eating food-like products."

I won't go into great detail about the benefits of chia seeds, but there are a ton of reasons to add them to your diet. I'm not a doctor or a biologist, but you can read all about they're benefits ON THE INTERNET. And here by Dr. Weil:
So, of course, in this effort to make my life more healthy, I figured I'd try them out. I ordered the Navitas brand from Amazon, and I'm hooked already.
Chia Uses (So far)
I've been adding chia seeds to my green smoothies. YUM. They have a very nice nutty flavor (unlike flax, which looks yummy, but tastes icky).
I like to grind them in my coffee grinder and keep a bit on hand for smoothies, and I even tried some in meatloaf last weekend. It worked great! A very nice, healthy, gluten-free binder.
Side note: don't grind up a LOT of chia seeds to keep on hand. The fresher they are, the better they taste, and the more nutrients you save. So just grind up enough for a day or two.
If you don't have a grinder, just put a tablespoon full in a container with about a half a cup of water in it. Stir, and then let it sit for a 5-or-so minutes and the seeds will absorb the water and make a super cool gel. I've been keeping this mixture in the fridge overnight for smoothies in the morning. Additionally, you can make the gel with ground chia seeds as well. (Watch the video below to see more about making gel.)
