It's been a long week at work ...immense back pain + my fingers going numb every time I started to type (carpal tunnel?) + chiropractor + Mobo ... finally by today I'm feeling so much better, and I think I finally have my chair/armrest/monitor/keyboard situation all figured out (at work at least!).
And some of my favorite people in the world are moving far, far away to Arkansas ...which means A) I'll miss them, and 2) no more Doctor Who viewing parties :(
So with all these lame excuses, tonight Celia and I are celebrating/moping/heyitsFridaywhatevering with tostadas and Pillsbury sugar-free brownies!
Not low-carb, but sugar-free will have to do for tonight!
Here's my thrown-together TOSTADA topping recipe...
In a big huge skillet or a non-stick soup pot (works great for big concoctions like this)
2lb ground beef (cook once, eat many, many times...)
1/4 cup ground flax meal
1 can drained green beans (chopped up--this is my sneaky way of getting veggies into my fam's little bellies)
1 can drained tomatoes (shared the juice with Ceil!)
1 can refried beans (not low-carb, but yummm)
Spiced it up (to taste) with salt, pepper, garlic, parsley, chives, cilantro and some fajita seasoning from my health food store. (Don't buy that junk in packets thats full of MSG & nitrates. Please!).
To serve: Spread the mixture on a tostada and top with salsa & sour cream. I would have added shredded cheese, but that sounded like too much work after making the brownies. I'm also out of onions or they would have been included.
And I must say, it was DE-LISH!
